Chef Jason brings his personal cooking philosophy into designing his spring menu, explaining: “I’m all about hyper-seasonal cooking—whatever’s freshest and most flavorful at that time of year. At home, I cook with whatever I can find at the farmers market.”

  • Scallops – Buttery, delicate, and perfectly seared, these scallops are pure indulgence.
  • Carrot Soup – A beautifully presented dish, where velvety soup is poured tableside over crème fraîche, highlighting the sweet, earthy flavors of heirloom carrots.
  • Hamachi Crudo – A vibrant dish featuring fresh hamachi topped with a striking lace squid ink cracker—both fun to eat and an absolute delight for the senses {pictured above}.
  • New Zealand Salmon – Seared to perfection, this rich salmon rests on a velvety green garlic purée, complemented by asparagus spears, Tokyo turnips, trumpet mushrooms, and shaved breakfast radish.
